When Max texted to co-writer Danny about the title he came up, he texted as 'defeat u' instead of 'defeat you' since typing 'u' is faster than 'you' and is the text abbreviation of 'you', that's where he went with the text and promptly replaced 'you's following 'defeat' in the lyrics with 'U'. I won't be happy until I defeat you. I don't see any real difference in these two phrases, except "beat" may imply fighting while "defeat" is more general.

I agree with the previous posters that "beat" might carry the sense of a physical fight, but I'd just add that it definitely does not have to. To my ear, the biggest difference is that "until I beat you" is less formal than "until I defeat you", which is a bit stilted for ordinary conversation. I think that you'd say "
